Mud cake and Glasses

Well  This weekend has been full of good things, I made Chocolate mud cake for dinner at a friends, which turned out amaazing! :P Here is a picture;

And also hubby got glasses! A few hundred dollars later, he can now see :P Which is great, considering he is studying and has to be able to see the white board lol. I think the Glasses looks very sophisticated and handsome, see what you think;


Well its Monday tomorrow, back into the work week :) Im off to a Marketing conference on Tuesday in Tauranga which should be really interesting and informative.

Work Photos

Yesterday I had lunch with Ilana, the Fabulous Photographer over at Pure Photography. She is leaving to go live in Palmerston North with her Hubby, so we had a farewell lunch, it was so lovely.

I asked her if she would take a photo of me for work, as i am designing some new marketing brochure, and we need up-to-date photos of our staff to go in it, so she gladly took some beautiful photos of our staff. I will show you some of mine;

Red Velvet Cake

I made a Red Velvet Cake on Sunday, because we were going out to a friends for dinner. I thought it would be nice to make something different. I have made Red Velvet Cupcakes last year, but i think that this cake was waaay better.

I got the Recipe from Joy the Baker, it was really easy, and the frosting was a hit! I have made similar here, with my Coconut layer cake. But this frosting recipe was quicker and easier, no need for scary candy making, just need a pot, a bowl and a mixer (plus ingredients)

Blonde moment!!

So i had a rather interesting morning i accidentally locked my keys inside my house..i was in too much of a hype that i was actually going to be early for work, that i shut the door without grabbing my keys..what a dufus! hubby was working this morning, the one day he works, i lock myself out..blonde.

So i had to wait for hubby to come home, and i had enough time to walk to a cafe and grab myself a coffee (benefits of living in town) Then i FINALLY got into work about 10am! An hour later than i should have :P

Well I'm off to have my second coffee of the day, i think its going to be one of those days..

Oh and here is a pic of the super cool Valentine I got from my wee friends Grayson (my friends 7mnth old son) :P He's a cutie, wee romantic! lol

Watercolour Birthday Card

I realised i haven't done any arty posts in a while, so here is the card i made dad for his 55th birthday on Sunday :) I used the new Watercolour pencils i got at Christmas, from my brother :)

So yeah, thats about all the drawing i have done lately, haven't been to inspired to do anything. Hopefully i can get inspired soon, i should really keep up with doing my art.

So yeah its also Valentines Day - HAPPY VALENTINES DAY Y'ALL!! :)
Hubby and I had a picnic at the spot where we took our Wedding photos over 3 years ago. Our evening started off rushed, as i had thought we were going to a picnic for our Lifegroup..half way there, found out we weren't..LOL! So we had an impromptu picnic! It was lovely, we had chicken and coleslaw buns with a can of Dr Pepper each! yum!

Well it was a lovely day today, i had a visit from my favourite wee man - Grayson, he brought me a rose for Valentines day! (he's my friends 7 month old son)
Hubby got me a toy pig - from Angry birds!!! LOL its awesome! :P


Well it think i might get my stuff ready for work tomorrow, and maybe even go to bed early (not that early, its already ten to nine..:P)

Found Grans Wedding Dress

When we were down south for my Grans Funeral, we were looking through her things and we found her wedding dress! From 57 years ago! Sadly some mice had eaten some of the fabric, as it wasn't in a box..but none the less it was still amazing. The styles have changed so much in 50 years, but this dress was made of the nicest fabric and lace! I can hardly believe she could afford it back then.

My Dad took a picture of me wearing her dress, as we found out from pictures of when she was young, that I am similar in body shape and size to her. Here is the picture Dad took, with a picture of Gran wearing it on her wedding day, in 1955.

Peanut Butter choc Chip Cookies

I was rather bored today, so i decided i would bake some cookies :) I was round at a girlfriends the other day and she made some, ever since then i have wanted to eat more. So i made some of my own :)
I wanted to find the easy recipe, which just has Peanut Butter, Sugar and an egg..but i couldn't seem to find one that sounded good. So i used one from a blog a frequently Visit Smitten Kitchen, you check them out and see the recipe here.

Well they were really easy to make, and didn't take long at all, they would take even less time if your oven isn't as stupid as mine (and is an old piece of junk with only ONE shelf!!) Had to do it in three lots.
Makes about 36.

Peanut Butter Cookies
Adapted from the Magnolia Bakery Cookbook

1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup peanut butter at room temperature
3/4 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
1 teaspoon vanilla extract
1/2 cup peanut butter chips
1/2 cup chocolate chips
For sprinkling: 1 tablespoon sugar, regular or superfine

  1. Preheat oven to 350 degrees (F). 
  2. In a large bowl, combine the flour, the baking soda, the baking powder, and the salt. Set aside.
  3. In a large bowl, beat the butter and the peanut butter together until fluffy. Add the sugars and beat until smooth. Add the egg and mix well. Add the milk and the vanilla extract. Add the flour mixture and beat thoroughly. Stir in the peanut butter and chocolate chips. 
  4. Place sprinkling sugar — the remaining tablespoon — on a plate. Drop by rounded teaspoonfuls into the sugar, then onto ungreased cookie sheets, leaving several inches between for expansion.
  5.  Using a fork, lightly indent with a crisss-cross pattern (I used the back of a small offset spatula to keep it smooth on top), but do not overly flatten cookies. Bake for 10 to 12 minutes. Do not overbake. Cookies may appear to be underdone, but they are not.
  6. Cool the cookies on the sheets for 1 minute, then remove to a rack to cool completely.

Well i better go cook some tea for hubby and me..its 8pm!! LOL

Pumpernickel Bread

So finally got around to posting the photos from my Pumpernickel bread :)
It was so yummy, have a bit left, i think i will have it toasted for lunch tomorrow!

The process was pretty much the same as making any other bread, if not a bit quicker and easier.
I didn't have all the ingredients for this exact recipe, so i used 2 cups of white flour and 1 cup of Rye flour. But as i found out, the Rye flour is very dense, and made the dough quite tough. Next time i will use the 1/2 cup Rye and 1/2 cup of wheatmeal. And perhaps add a bit more water, so made it a bit more moist - or even some olive oil.

Another thing i changed was just to add 1/2 tsp of Caraway and Fennel seeds.
