Healthy Oatmeal Cookies


So today is was Anzac Day in New Zealand, were most have the day of work, and of course to remember the soldiers that died in Gallipoli. Well my day consisted of going to bed at 3am! Wow..no wasn't out partying, hubby and I went to go see the midnight screening of the Avengers - and it was awesome! Im not that into comics, so i wasn't too worried if it was boring, but i was pleasantly surprised how good it was. Hubby is a huge Marvel comics fan, so he was pumped to go :P The movie was packed! there were 3 Cinemas open, and there were soo many people, it was craaazy!

Well since we ended up going to bed at 3am, hubby and i stayed in bed until like 11am, man were we tired! So it was a slow morning, then at lunchtime i had to go drop hubby off at work. So it was a me day today, i showered and watched some TV, then decided to watch a movie, called ' Like Crazy' - it was really good, and romantic one, but pleasantly well done, and the cinematography was impressive.

So once that finished i thought i should be a bit productive, so i made some Oatmean cookies, i really wanted to do a Healthy option, so i used Wholemeal flour, Mollases and Honey for the Sweetening. I think they are really yummy, hubby thinks they need a but more sweet..i could add in a bit more honey next time. But i really wanted them to be crunchy, and they were more soft chewy..so i might have a look around for another recipe that uses wholemeal flour and oatmeal.

Healthy Oatmeal Cookies (with Honey)

Ingredients:
Dry ingredients
               1 1/2 wholemeal flour
               1 1/2 cups of Flake Rolled Oats
               1/2 tsp baking soda
               1/2 tsp baking powder
               1/2 tsp salt
               3 Tbsp Cinnamon
               1/2 tsp Nutmeg (optional)

Wet ingredients
               1/2 cup honey
               1/2 cup oil (rice bran or neutral oil)
               1 Tablespoon Molasses
               1 egg (beat with 1 Tbsp Water)
               1 tsp Vanilla

Yummy ingredients
               1 cup raisins (and or walnuts)


Preparation:

1.            In a large bowl, mix all the dry ingredients together.
2.            In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
3.            Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
4.            COOL the mix for 20 minutes in the fridge.
5.            Preheat the oven to 180 degrees Celsius.
6.            Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.

Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.
