Hummingbird Cake

We have three Feijoa trees at our house, so we have ALOT of i had to find a way to use some of them up as well as some very very ripe bananas :P So i found a recipe for a 'Hummingbird Cake' which is typically made with Bananas and Pineapple, but i thought it would be quite tasty with feijoas instead :P So here are some process pictures, and the recipe;

Hummingbird Cake

340g Feijoas - mashed 
1 1/2 cups plain flour 
1 1/2 tsp baking soda 
1 tsp cinnamon 
1 tsp ground ginger 
1 cup firmly packed brown sugar 
1/2 cup desiccated coconut 
3  over ripe bananas - mashed 
2 large eggs at room temp lightly beaten 
3/4 cup vegetable oil ( i used Rice Bran Oil)
Cream cheese icing 

60g softened cream cheese 
1 1/2 cups icing sugar
1 Tbsp Lemon juice 
Zest of 1 lemon


Preheat oven to 180degC 
Grease and line a cake tin with baking paper.
Drain pineapple over a medium bowl, reserve 1/4 cup syrup. 
Or/ get ready your feijoas and mash them.
Into a large bowl, add sifted flour, soda, spice then stir in sugar. 
Add Fruits, coconut, eggs and oil. 
Pour into baking tin and cook around 50 minutes.

Icing Beat together cream cheese and Icing Sugar until light and fluffy. 
Add in Lemon juice and Zest until combined.
Spread over top of cold cake and decorate with zest of Lemon and Coconut.

  1. What are feijoas and how can we get them?

    1. Feijioas grow on a tree. You find them in mainly New Zealand and Australia. They're kinda tangy sweet :)
