Vanilla Cupcake Recipe & Spaceship Cake


Well its been a while since i did a post on here, life has been a bit busy lately..too much to do, and not much time to blog! So i have done some baking recently, and they were superb! I think they are now my favourite flavour of Cupcake - and its Vanilla! Who would have thought! (and they even get better with time..weird..

So i thought i would share with you the recipe, which i have changed a bit from the one i found, as i like to beat the crap out of the butter and sugar, as i have found it makes the cupcakes lighter and a nicer texture. I also added buttermilk, which is really a fancy word for sour milk, dont know why but it makes them taste sooo good, and again gives them a great texture and makes them light!

Now of course this is a Cupcake recipe, which means they are going to NEED to be frosted! If it doesn't have frosting, its not a cupcake, its just a muffin!


So here is an easy butter frosting recipe, which i used to frost my vanilla cupcakes;

Buttercream Frosting
  • 125g butter, softened
  • 3 cups icing sugar, sifted (or more if you are piping, as you need it fairly stiff)
  • 1 teaspoon vanilla essence
  • ¼ cup milk warmed for ten seconds in microwave
     
    And any food colouring you wish  - just add a touch of colour, as pastels look really nice.
     
  • To make buttercream Frosting, cream the butter with an electric mixer until very pale, about 2-3 minutes.  Using low speed, mix in the icing sugar alternatively with the milk and vanilla.  Continue to beat until light and fluffy. Add colour if you wish.

    Pipe or swirl the buttercream Frosting onto cooled cupcakes.
     
Now here is a picture of mine - which was taken on my phone so its crappy quality, they were sooo yummy!
