Holiday Weekend and Chocolate Pie

What a lovely long weekend this has been! Even though the weather was terrible for the Sunday - we still had a great weekend. On saturday i decided it was about time i spring cleaned (which really means cleaning the mould off of the bathroom ceiling and from the walls in our bedroom - ew just realized that makes our apartment sound gross! well it's not anymore) I spent from about 10:30am till 3:30pm cleaning, firstly i did the washing and hung it outside - it was actually sunny! Then i did the boring dishes and tidied up the house. Then..i got onto the mould - it has been pestering me for weeks, and i dont think i could have put it off any longer. So i did it, got my ammonia out, got my gloves and bandana on over my face - and looking like a gangsta cleaner i battled the mould..and i won!! Though the house smells like Ammonia, i can now say that it is truly clean..not just, you know 'clean' lol.

Anyhoo..then i was so totally exhausted so i had a wee nap then we went off to town to pick up a few things and then i spent the evening babysitting for a friend. Sunday was however spent inside (it was raining ALL day) and i stayed in my pj's all day too! Watched TV shows and a movie or two..then takeaways for tea! Bliss :P

Today was spent almost as relaxing, slept in till 9:30am then leisurely got up and headed to the mall to get hubby some new jeans (he wears them out soo fast! just turned two pairs into shorts!) And to get me a Flan/Pie dish for my Chocolate Silk pie for dessert this evening.

And on the subject of Chocolate Silk Pie - Here are my pictures and the recipe below (you wouldn't believe me that it has NO butter in it, and hardly any sugar - tastes great, and its a slightly more healthier option for a dessert)

Chocolate Silk Pie - from


1 Packet of Digestive Biscuits
2 tablespoons chopped pitted dates
2 tablespoons water
3 tablespoon canola oil
2 tablespoons strong brewed coffee
1 tablespoon water
1 1/2 teaspoons unflavored gelatin
large egg
1/2 cup low-fat milk
8 tablespoons packed light brown sugar, divided
1/3 cup unsweetened cocoa powder
60g bittersweet chocolate, chopped
2 teaspoons vanilla extract
2 Egg whites
1/2 teaspoon  cream of tartar


1. Preheat oven to 180 degrees C. Coat a 9-inch deep-dish pie pan with cooking spray.

2. To prepare crust: Combine Biscuits and dates in a food processor; process until finely chopped. Add water and oil and process until moistened. Press into the bottom and sides of the prepared pan.

3. Bake until crisp, about 10 minutes. Cool completely on a wire rack. (keep in dish)

4. To prepare filling: Combine coffee and water in a small bowl. Sprinkle gelatin on top and stir -  set aside to soften.

5. Whisk egg, milk, 3 tablespoons brown sugar and cocoa in a small saucepan until smooth. Cook over low heat, whisking constantly, until thickened. Do not let the mixture come to a simmer. Remove from the heat. Add the reserved gelatin mixture; stir until dissolved. Add chocolate and vanilla, stirring until melted. Set aside to cool to room temperature, about 15 minutes.

6. Beat egg whites and cream of tartar in a large bowl with an electric mixer on low speed until frothy. Increase speed to high and beat until soft peaks form. Gradually add the remaining 5 tablespoons brown sugar, beating until the meringue is smooth and glossy.

7. Whisk one-fourth of the meringue into the cooled chocolate mixture until smooth. Scrape the chocolate mixture into the remaining meringue and fold in with a whisk. Spoon the filling into the crust and chill in the fridge, uncovered, until set, about 2 hours.

I didn't serve it with anything, as it is rich, but i would go nicely with some mascarpone or greek yoghurt :)

Creamy Broccoli Pesto Pasta..MMm

So last night i decided to use one of the many recipes i have found on Pinterest for dinner. My Mum and I grew Broccoli this year - and they are all ready now - so we have ALOT of Broccoli :P

This recipe was very easy and quick - especially since i used Angel Hair Pasta, which only takes 2 mins to cook.

Here was my result, it was so light and delicious!

Well back to work for me - my long weekend starts at 5pm today, though the weather looks like total crap - i think i will have to find some inside things to do, how sad. Anyhoo..back to work!

Birthday Trip!

Well yesterday was my 23rd Birthday! And hubby surprised me by taking me to Rotorua for the day :)
We went to the same Mineral Hot Pools as we did almost 2 years ago, when er celebrated our 1st Wedding Anniversary. It was so lovely then, we decided to go again - and it was just as good! So relaxing and Private - its like a little bit off heaven!

After the Hot pools, we took a drive through town to try and find the Italian Restaurant we had dinner at last time we visited - and thankfully we found it! So we had a really lovely lunch there (and it was soo cheap! $25 for both of us - including glasses of wine!)

After that we took a walk down the street to the Liquor store we bought a yummy Port last time - we haven't quite finished our other one - but we got another one since we were there :P

Then we headed home - man were we exhausted! But relaxed. We got home around 3:30pm and went straight to bed to have a nap! haha. Then we popped over to the supermarket to pick up some fresh pasta and sauce - and that was tea :) we went to the Movies to go see 'Looper' - it was actually quote confusing, but very enjoyable. We snuck in some lollies, popcorn and coke - hehe it was fun!


But now I'm back at work - but i got a visit from a friend with another prezzie and Coffee! Ah i love my friends :)

Rainbow cake for my Sisters 20th

So i have been wanting to do this cake for a while, and i just havent really had time/wanted to do it..i knew it was going to be a lot of work, so i sort of put it off. But Thursday night i decided i would give it a go, it was a bit of a mission, but fun at the same time. My first hurdle was finding a vanilla cake recipe that was large enough, and without butter (since the frosting will be needing lots). So yeah, it turned out pretty amazing i might say myself :P Everyone loved it, and it was worth the time and effort - and the terrifying trip across town with a towering cake in my lap!!

Well thats all for now :) - off to take hubby to Dads, so Dad can take him on a practice ride on his Motorbike (hopefully the nice weather lasts!)
